smoky corn ribs

These corn ribs make a delightful snack or a great side to a summer BBQ. All you need is corn on the cob, a good knife and a few spices.




HOW TO MAKE CORN RIBS


The hardest part is cutting the corn into strips. You will need a very sharp knife and a hard surface. I have to admit, I always ask my husband to cut them for me as he is somewhat stronger than I am.


I like the corn cut into quarters, lengthwise. You can cut it into strips in whichever way work for you. Be very careful though!


Next, these corn ribs need to brushed all over with the smoky marinade, before baking them in the oven.


I have given a cooking time of 20 - 25min, but you can cook it longer if you wish. I prefer cooking mine a bit longer as like charred and crispy edges. Placing them under the grill for a few minutes will do the job too! I have not tried it yet, but I am sure placing them on a BBQ grill for a few minutes will do the same trick.


Serve them hot with your favourite dipping sauce, a few fresh lemon or lime wedges and fresh herbs if you desire.

TO MAKE THESE YOU WILL NEED

  • sweetcorn on the cob

  • extra virgin olive oil

  • sea salt

  • ground coriander

  • smoked paprika or liquid smoke

  • garlic powder

  • onion powder

  • black pepper

Serves: 2 - 4

Cooking time: 25 min



INGREDIENTS
  • 2 sweet corn on the cob, cut lengthwise into quarters


FOR THE MARINADE

  • 2 tbsp olive oil

  • ½ tsp sea salt

  • ½ tsp ground coriander

  • ½ tsp smoked paprika or a few drops of liquid smoke

  • ½ tsp garlic powder

  • ¼ tsp onion powder

  • Pepper to taste



INSTRUCTIONS
  1. Preheat the oven to 200C.

  2. In a small bowl mix the marinade ingredients until well combined.

  3. Brush each corn “rib” with the marinade and bake them in the oven for 20 – 25min or until charred and to your liking.

  4. Serve with fresh lime or lemon wedges and a dipping sauce of your choice. I love a homemade chilli sauce.
