Swapping the butter from the current butter board trend for hummus. Hummus layered with sundried tomatoes, crispy chickpeas, green olives, fresh herbs and spicy harissa oil.

WHAT ARE BUTTER BOARDS

Butter boards are all the rage at the moment. Think a charcuterie board, but with butter.


Butter is spread on a board and sprinkled with anything you like on it, such as roasted garlic, toasted almonds, chilli flakes, feta, fresh herbs, honey, etc. This is enjoyed by scooping it up with bread.



SWAPPING BUTTER FOR HUMMUS

This is my different and vegan friendly version of the trend.




TO MAKE THIS HUMMUS BOARD YOU NEED

  • homemade hummus

  • sundried or sun blushed tomatoes

  • green olives

  • crispy chickpeas

  • fresh herbs, such as basil or coriander

  • harissa

  • olive oil


HOW TO MAKE THIS

Spread the hummus on a plate or board. Top with chopped green olives, tomatoes, chickpeas and drizzle with harissa and olive oil. Finish with freshly chopped herbs.

SERVE WITH

  • flatbread

  • crackers

  • crusty bread

  • focaccia

  • crunchy veggies, such as carrot sticks, cucumber or celery sticks



Spicy Hummus Dip


SPICY HUMMUS "BUTTER" BOARD


Swapping the butter from the current butter board trend for hummus. Hummus layered with sundried tomatoes, crispy chickpeas, green olives, fresh herbs and spicy harissa oil.


Serves: 4 as a side

Time: 15 minutes



INGREDIENTS

  • a batch of my homemade hummus (see recipe link above)

  • 3 tbsp finely chopped sundried or sun blushed tomatoes

  • about 8 green queen olives, diced or sliced

  • a few crispy chickpeas

  • a handful fresh herbs, such as basil or coriander, roughly chopped

  • 1 tbsp harissa paste

  • 2 tbsp olive oil

  • sea salt and black pepper to taste



INSTRUCTIONS

  1. Spread the homemade hummus on a plate or board.

  2. Sprinkle with the chopped green olives, sundried tomatoes and crispy chickpeas.

  3. Mix the harissa paste and olive oil together and drizzle over the hummus.

  4. Finish with sea salt, cracked black pepper and freshly chopped herbs.
