Vegan Strawberry Ice Cream

Sweet, fruity, creamy and rich. A taste of British summer.
Strawberries and cream is probably one of the best flavour combinations.
Growing up, we would pick strawberries from the garden and my mom would sprinkle a bit of sugar over them, and let them sit for a while, before serving them with a scoop of vanilla ice cream or a dash of full-cream milk.
This ice cream reminds me a little bit of that.

FULL FLAVOUR
Now that I have stopped consuming dairy I wanted to make an ice cream that is both creamy and which includes fresh strawberries. This is a nut-free recipes, so to recreate that rich, creaminess one would get from cashews or dairy cream, I used coconut milk.
To get the extra strawberry boost, I add an additional strawberry puree, but this is optional. During the last minute of churning, slowly pour in most of the strawberry puree.
I like to reserve a little to swirl in the top of the ice cream before freezing.

TO MAKE THIS YOU WILL NEED
fresh strawberries
full fat coconut milk
Pinch of salt
cane or coconut sugar
maple syrup
fresh lime juice
vanilla extract
a blender
and an ice cream maker

VEGAN STRAWBERRY ICE CREAM
(vegan and nut-free)
Strawberry, coconut and lime ice-cream – sweet, zesty and so creamy!!
Serves 6 - 8
INGREDIENTS
FOR THE ICE CREAM
2 cups chopped fresh strawberries
1 can full fat coconut milk
Pinch of salt
¼ cup cane sugar
5 Tbsp maple syrup
1 tbsp fresh lime juice
STRAWBERRY PUREE (OPTIONAL)
1 cup strawberries chopped into small chunks
2 tsp cane sugar
1 can vanilla extract
INSTRUCTIONS
Add the ice-cream ingredients into a highspeed blender and blend until completely smooth and no sugar crystals.
Put the mixture in the fridge for about 2 hours.
Optional: In the meantime puree the strawberries in a blender.
Add the pureed strawberries, sugar and vanilla extract into a small saucepan and simmer on low for 5 - 7 minutes, until the sugar has dissolved and the sauce is thickening up a bit.
Set aside to cool for a bit and then refrigerate until needed.
Once your ice-cream mixture has been in the fridge for 2 hours pour the mixture into your prepared ice-cream maker and follow instruction as per manufacturer instructions.
During the last minute of churning, slowly pour in most of the strawberry puree. (I like to reserve a little to swirl in the top of the ice cream before freezing.)
For a soft serve texture serve straight away or freeze for a few hours until ready to be eaten.
