strawberry & vanilla overnight oats


Strawberry & vanilla are a match made in heaven. Made with creamy oats, fresh strawberries and vanilla, this is a breakfast that will make you think it is summer (even though it might be rainy and windy outside).




TO MAKE THIS YOU WILL NEED
  • organic whole rolled oats

  • fresh strawberries

  • mashed banana or sweetener of choice

  • plain plant-based yoghurt, but vanilla will work really well too

  • almond or cashew milk

  • vanilla extract

  • hemp seeds (optional)

  • pinch of sea salt



SIMPLE. EASY. DELICIOUS.

Mix all the ingredients together and let is soak overnight. Simple. Easy.

You can add the strawberries the night before or add it fresh before serving.






OTHER OPTIONS

  • I used a mashed banana as a sweetener for the oats, but you can use maple syrup or agave syrup as an alternative option.

  • For a gluten-free option make sure so use a gluten-free certified oats

  • For a nut-free option use a nut-free milk alternative such as oat or pea milk.

  • I used an unsweetened oat-based Greek style yoghurt ,which makes it extra creamy. You can however use a vanilla yoghurt or any unsweetened plain yoghurt.

  • If you are using a vanilla flavoured yoghurt, you can omit the vanilla extract.

  • You can use frozen strawberries, but you might need to add them the night before.

STRAWBERRY & VANILLA OVERNIGHT OATS


The classic combination of strawberries & vanilla in a healthy breakfast. Rich, sweet and summery.

This breakfast is refined sugar-free, vegan and with a nut and gluten-free option.

Time: 5 min



INGREDIENTS
  • 1 cup whole rolled oats, preferably organic

  • 1 cup cashew milk or milk of choice

  • 1 banana, mashed or sweetener of choice

  • 1 - 2 tbsp unsweetened, plain vegan yoghurt (I find greek-style yoghurts work best)

  • pinch of salt

  • 1/2 tsp vanilla extract

  • 1 tbsp hemp seeds (optional)

  • 4 -5 fresh strawberries, chopped



INSTRUCTIONS
  1. Mix all apart from the strawberries together in a bowl. Cover and place in the fridge and let it soak overnight.

  2. When ready to serve, add more liquid or yoghurt if needed. Divide between two bowls and top with the chopped strawberries*



*NOTES

If you are using frozen strawberries make sure to add the strawberries the night before. Or if you are using fresh strawberries, you could already add them the night before. I personally prefer adding mine fresh, but this is up to you.
