vanilla & orange oats

Orange & vanilla is such a fabulous flavour combination. Sweet, but with a bit of tanginess from the oranges. This pairs perfectly with a warming, creamy oats. A fantastic breakfast for the colder mornings.
One of my fondest childhood food memories is breakfast at my godmothers. Sitting at a kiddie sized wooden table and chair, with a big colourful bowl of cooked oats enjoyed simply with a splash of milk and brown sugar, and a cup of sweet tea on the side. I still remember the smell in the kitchen from the cooked oats, with that sweet smell from the sugar melting on the warm porridge, creating little melted sugar puddles on top of the oats.
That first spoonful when the milk is still cold, with the hot porridge and the melted sugar... I can still taste it.

She still makes the best oats!
What was left-over after seconds was stored in the fridge. Sneaking a spoonful of cold cooked oats the next morning was so good.
Am I the only one that likes chilled cooked oats?

TO MAKE THIS YOU WILL NEED
rolled oats, for gluten-free option make sure to use gluten-free certified oats
milk of choice or water
pinch of salt, to balance and enhance the flavours
2 fresh oranges, juice from one and segments from the other
vanilla extract or paste
banana or maple syrup for sweetness
Optional: yoghurt of choice, granola
VANILLA & ORANGE COOKED OATS

Prep time: 5 min
Cooking time: 10 min, or according to preference.
Total time: 15min
INGREDIENTS
80g rolled oats, gluten-free if required
Juice from1 fresh orange
180ml water/ almond milk, or more depending on consistency of oats you prefer
Pinch of salt
1 tsp vanilla extract
1 tbsp chia seeds (optional)
To serve
Segments from 1 orange
1 mashed banana or 1 tbsp maple syrup for sweetness
Almond or coconut yoghurt
Another drizzle of maple syrup
Granola (for crunch)
INSTRUCTIONS
Add the oats, orange juice, salt, almond milk and vanilla extract to a small saucepan and cook on low for 5- 10 min (or to your liking/ cooking instructions on the packaging), stirring occasionally.
If you prefer cooking your oats longer, you will probably need to add more liquid.
If you are adding banana add this now and cook for a few more minutes.
Serve warm with orange segments, a dollop of non-diary yoghurt, a drizzle of maple syrup and granola
