A very easy and simple dessert, made with minimum ingredients and little effort.
This vegan apple turnover recipe is delicious with a lightly sweetened apple filling, covered in a flaky puff pastry. Served with a delicious homemade custard or ice cream, this make a great winter dessert.

What is a turnover?
Also known as fold-overs, turnovers are individual pies often made with puff pasty, which are made by folding a piece of pastry in half over a filling.
Turnovers are very versatile as you can use almost any kind of fruit in the filling.
If you have puff pastry in your freezer and apples in your pantry, you are already more than halfway there.
Thanks to store-bought puff pastry, these are so much easier to make than it seems.
Easy as pie (sorry, I just had too)!
To keep this recipe vegan make sure to use a vegan puff pastry, use a vegan sugar and instead of an 'eggwash' (to help the pastry go all golden) simply brush the pastry with a bit of almond milk and sprinkled it with a bit of sugar.
Good to know!
Any uncooked turnovers can be frozen until needed.
I usually make a big batch and freeze the rest!
All you need to make these are
apples
vegan puff-pastry sheet (store- bought)
all-purpose flour for dusting
ground cinnamon
brown cane sugar
lemon juice
raisins
corn-starch
vanilla extract
pinch of salt
almond milk and sugar to finish

Additional options
You can add additional spices to the apple mixture if you like:
1/4 tsp ground ginger
1/4 tsp ground nutmeg
pinch of all spice
If you don't like raisins you can omit.
If you want to add a bit of crunch, you can add a few chopped nuts to the filling.
You can replace the sugar with maple syrup or agave syrup.
You can replace the apples with pears or peaches.

Makes: 6 large or 8 small
Prep time: 15 - 20 min
Cooking time: 25 min
Total time: 40 - 45 min
INGREDIENTS
1 sheet vegan puff pastry ( I used store-bought)
2 apples
30g raisins (optional)
1 tbsp cane sugar, plus extra for dusting
1 tsp ground cinnamon
3 tbsp fresh lemon juice
100ml water
1 tbsp cornstarch
1/2 tsp vanilla extract
pinch of salt
2 -3 tbsp almond milk to finish
Additional but optional spices you can add:
1/4 tsp ground ginger
1/4 tsp ground nutmeg
pinch of all spice
INSTRUCTIONS
Core, peel and slice the apples into small pieces. Transfer into a bowl, add the sugar, salt, raisins, lemon juice and spices and mix until all is evenly coated.
Preheat the oven to 200C.
In a saucepan, add the water, cornstarch and vanilla extract and bring to boil, whisking constantly.
Add the apple mixture and mix until evenly coated. Cook for another minute.
Remove from the heat and set aside.
On a lightly floured surface, unroll and cut the puff pastry into 6 or 8 rectangles (depending on the size you want).
Add 2 - 3 tbsp of the apple filling in the centre of the pastry sheet.
Using a pastry brush, brush the edges all around with a bit of water. This will help seal the edges.
Take one side of the pastry and gently fold it over the filling to create a parcel.
Using a fork, press down the edges to seal the pastry parcel.
With a sharp knife cut a small x-shape in the centre, this will allow the steam to escape during the baking process.
Brush the pastry all over with a bit of almond milk and sprinkle with a bit of sugar.
Transfer onto a prepared baking tray and repeat with the rest.
Bake in the oven for 20 - 25 min or until golden and flaky to your liking.
Enjoy warm with homemade custard or ice cream.
