vegan chocolate orange ice cream


Silky smooth and rich chocolate orange ice cream, to be enjoyed by grown-ups. This ice cream is made with minimal ingredients and a shot of orange liqueur.


Not only does the orange liqueur add a wonderful flavour, it also enhances the texture which I explain below.




WHAT HAPPENS WHEN ADDING ALCOHOL TO ICE CREAM

Have you ever noticed some people keep their vodka in the freezer, but yet it always stays in a liquid form and is never frozen?


Now imagine what would happen if a little bit of the alcohol (that never/ doesn't freeze easy) is mixed into the ice cream mixture.


Adding the orange liqueur lowers the freezing point of the ice cream mixture which results in a smoother and creamier texture. The mixture does not freeze as solid as it normally would without the alcohol. Another advantage is that it is less likely to form ice crystals.



FOR A NON-ALCOHOLIC VERSION

You can use fresh orange juice or a teaspoon of orange extract instead of the liqueur. However, the orange flavour might not be as present and obvious if using orange juice.





THE INGREDIENTS


CASHEW NUTS.

Make sure to use raw, unsalted cashew nuts. These are soaked overnight to make them softer and creamier.


COCONUT MILK.

I always use a full fat coconut milk as it gives a creamier, richer texture.


MAPLE SYRUP.

Make sure to use a 100% maple syrup and not a maple flavoured syrup.


CACAO POWDER.

I recommend using cacao powder, preferably organic. You can alternatively use cocoa powder, but make sure that it is unsweetened.


ORANGE ZEST.

The fresh zest is important as it has an intense orange flavour that we want in this ice cream.


ORANGE LIQUEUR.

As mentioned above, this gives that extra creamy texture and adds that wonderful orange flavour.

Make sure you are using a vegan liqueur (if needed).


PINCH OF SALT.

The salt helps balance the flavours and intensifies the chocolate flavour.



THE EQUIPMENT

BLENDER.

A good high-speed blender is necessary to get the mixture completely smooth.

Poor quality blenders or not blending the mixture until completely smooth will result in a grainy texture.



ICE CREAM MAKER.

I have a Cuisinart ice cream maker, which I absolutely love. It churns the ice cream into the perfect soft serve consistency within 25 minutes.



AN ICE-CREAM SCOOP.

Okay so this is not at all a necessity as you could just use a spoon, but I just wanted yet another reason to point out my gorgeous (proper vintage) ice cream scoop which you can see in all my photos. This scoop I inherited from my husbands grandmother and is therefor very special to me.


TIP! To get the perfect scoop let the ice cream sit at room temperature for a few minutes before serving. Dipping the ice cream scoop or spoon in hot water first will make the scooping also easier.

CHOCOLATE ORANGE ICE CREAM

Serves: 4 - 6

Time: 3o min, plus soaking and freezing time




INGREDIENTS
  • 160g raw cashew nuts, soaked overnight

  • 1 can coconut milk

  • 160g maple syrup

  • 30g cacao powder

  • 25ml orange liqueur

  • 1 teaspoon vanilla paste (optional)

  • pinch of salt



INSTRUCTIONS
  1. Rinse and drain the soaked cashew nuts.

  2. Add the nuts and the rest of the ingredients to a high-speed blender and blend until completely smooth.

  3. Pour the mixture into your ice cream churner and churn until soft serve consistency.

  4. Transfer the ice cream into an freezer safe container and freeze for a few hours or until ready to serve.

  5. Once completely frozen, I recommend letting the ice cream sit at room temperature for about 20 minutes to make it easier to scoop.
