Vegan Tiramisu

THE LAYERS
HOMEMADE LADY FINGERS
It's not easy to find store-bought vegan-friendly ladyfingers, so it is best to make your own. I used the vegan lady finger recipe from one of my favourite vegan food bloggers, Lazy Cat Kitchen.
They are really light and very easy to make.
Each biscuit is dipped in a coffee and liquor mixture before layering them in the bowl.
WHIPPED VEGAN CREAM
Use a good quality, whip-able plantbased cream. I would not recommend using a coconut based cream, as that will change the flavour profile.
A DUSTING OF CACAO
To finish the tiramisu.
TO MAKE THE TIRAMISU YOU WILL NEED
A whip-able vegan cream (I used Oatly)
Vanilla bean paste
Icing sugar
Cacao powder
Espresso or cold coffee
Coffee Liqueur
Vegan ladyfinger biscuits, recipe here.
MAKE IT NON- ALCOHOLIC
You don't have to add the liqueur if you want to keep it alcohol-free. You can always add more coffee if needed.
NO LADYFINGERS
Biscoff biscuits or a light sponge cake will be a good alternative instead of ladyfingers.

VEGAN TIRAMISU

TIME: 20 minutes
INGREDIENTS
250ml whip-able plant cream (I used Oatly)
1 tsp vanilla bean paste
1 tbsp icing sugar, or more if needed
80ml cold coffee
2 tbsp coffee liqueur
20 vegan ladyfinger biscuits
cacao powder, for dusting.
INSTRUCTIONS
In a bowl, whip the vegan cream, vanilla bean and icing sugar using an electric whisk or hand whisk until soft peak. Set aside.
In a shallow bowl add the coffee liqueur and coffee.
One by one, dunk each lady finger in the coffee mixture for a few seconds, before arranging them in a row on the bottom of a deep dish.
Fill any gaps. Cut the biscuits into smaller pieces if required.
Once the base if covered with biscuits, add a generous layer of the whipped cream.
Follow by another layer of biscuits and finally another layer of whipped cream.
Dust with a layer of cacao and place in the fridge for at least 30 minutes or overnight.
