Vegan Tiramisu Pancakes

Stack of tiramisu inspired pancakes - coffee flavoured pancakes, topped with a layer of yoghurt and a dusting of cacao.
So delicious, so indulgent, yet healthy. A dessert and breakfast combined. This is what breakfast should be like everyday.
A GOOD STACK
Who doesn't like a good stack of pancakes? What makes it even better is that it tastes like dessert!
This recipe make about 4 small pancakes, enough for one person. Double the recipe to make a delicious brunch for two.
WHAT IS TIRAMISU?
Tiramisu is an Italian desert made with layers of coffee soaked ladyfingers, whipped, sweet mascarpone cheese and cacao powder. Traditionally Tiramisu is also soaked in a coffee liqueur such as Kahlua, but we won't add that to the pancakes today.
DESSERT FOR BREAKFAST
To achieve the Tiramisu flavours, a good amount of instant coffee powder is added to the pancake mixture. Almond essence and vanilla extract is added to the yoghurt and/or the pancakes which gives it a bit of a biscuit flavour. The stack is finished with a layer of yoghurt and a generous dusting of cacao powder.
TIP! Adjust the strength of the coffee to your liking. But also don't add too little as we want that coffee flavour to be present in the pancakes.
YOU WILL NEED
oat flour or rolled oats blended. Use gluten-free is required
a ripe banana (the riper the better)
baking powder
almond or oat milk (or milk of choice)
a good quality instant coffee, I used decaffeinated
plantbased plain yoghurt, preferably unsweetened
a few drops almond essence
vanilla extract
maple sweetener or liquid sweetener (optional)
a pinch of sea salt
cacao powder for dusting
HOW TO MAKE
If you don't have oat flour, simply add all the ingredients for the pancakes into a blender and blend until smooth.
Spoon (2 - 3 tablespoons) of batter into a hot pan and fry until golden. Use the back of a spoon to shape the batter into a round, even pancake if required. You might get more or less than 4 pancakes out a batch. This will all depend on how much batter you use per pancake.
Once the pancakes are cooked and ready, stack them on a plate and finish with a layer of yoghurt mixture and a dusting of cacao powder.
Alternatively you can also spread a small amount of the yoghurt between each pancake.
The yoghurt layer is a simple mixture of plain, plantbased yoghurt, a few drops of almond essence, vanilla extract and maple syrup (optional if you like it sweeter).

Time: about 25 minutes, depending on how many pancakes you are making
INGREDIENTS
THE PANCAKES
30g oat flour
1 small mashed banana (about 40g)
40ml almond or oat milk
1/2 tsp vanilla extract
pinch of salt (optional)
1 heaped tsp instant coffee (reduce or increase amount depending on strength of coffee you like)
1/2 tsp baking powder
THE YOGHURT LAYER
40g plain, plantbased yoghurt
a few drops almond essence
1/4 tsp vanilla extract
1 tsp maple syrup (optional)
FOR DUSTING
1 tsp cacao powder
INSTRUCTIONS
FOR THE PANCAKES Mix all the pancake ingredients together until well combined. Alternatively you can blend everything in a blender until smooth. Let it sit for 5 minutes to thicken a bit.
Heat a non-stick frying pan. Once hot spoon in 1 tbsp pancake batter. Add a bit of coconut oil if you are not using a non-stick pan. Use the back of the spoon to evenly spread into a round pancake
Fry for about 4 minutes or until golden before flipping.
Fry for a few more minutes or until golden.
Repeat until all the batter is used
FOR THE YOGHURT LAYER simply mix all the ingredients together. Stack the pancakes and spoon the yoghurt on top of the pancakes and dust with cacao powder.
Best enjoyed immediately.
