watermelon, mint & veta salad


Sweet & savoury, and incredibly refreshing. This salad takes minutes to throw together and makes a wonderful salad for summer.


Currently the UK is experiencing a heatwave and today is a scorching 36 C degrees and tomorrows forecast is for 34 C. For those of you who are not aware, but these are not normal temperatures for the UK. When it's this hot all I want to do is eat smoothie bowls, ice cream and salads. And drinks loads of iced coffees....


This salad is just perfect for dinner today. It is a good combination of sweet and savoury, with a tangy dressing. Best enjoyed al fresco, paired with a glass of ice cold, oaked chardonnay perhaps? Followed by a bowl of homemade ice cream.




Craving ice cold watermelon in the summer is nothing new and this certainly is a delicious way to enjoy it too!



TO MAKE THIS YOU NEED
  • watermelon

  • vegan feta (aka veta)

  • cucumber

  • pistachio nuts

  • fresh mint

  • fresh basil

  • and a zingy lime dressing


ADDTIONAL OPTIONS
  • add thinly sliced chillies such as jalapeno or red chilli for spice

  • add thinly sliced red onion

  • add some rocket (arugula)

  • add fresh chopped strawberries

  • replace the pistachio nuts with cashews or walnuts

  • add cubed avocado

  • replace the lime with fresh lemon juice

  • if you don't have or like (vegan) feta, you can omit. You might however need to add more salt to the dressing.


TIP!

Mix gently! As the watermelon is delicate it helps to mix the dressing in a separate bowl before pouring over the salad More often then not when we make salad we pour each ingredient of the dressings separately over the salad and mix everything in the bowl. However premixing the sauce means the salad doesn't need to be mixed too much, which can help avoid slushy watermelon pieces. Therefor be gentle.






WHAT TO SERVE WITH THIS SALAD

Have it as a light lunch or serve it as a side.

This salad pairs well with veggies burgers or with these vegan smoky corn ribs

Serves 3 - 4

Time: 10 minutes


INGREDIENTS

FOR THE SALAD
  • 4 cups cubed watermelon

  • 40g pistachio nuts, roughly chopped

  • 1/3 cup mint and/or basil leaves, roughly torn

  • 1/2 block vegan feta, or to your liking

  • 1 cup diced cucumber (optional)

  • 1/4 thinly sliced red onion (optional)


FOR THE DRESSING
  • 2 tbsp extra virgin olive oil

  • 2 - 3 tbsp fresh lime juice, or to taste

  • 1 tsp lime zest

  • 1 small clove garlic (optional)

  • sea salt and cracked black pepper, to taste


INSTRUCTIONS
  1. Make the dressing by mixing all the ingredients together in a small bowl and set aside.

  2. In a large salad bowl, add the watermelon, cucumber, half the mint/basil and onion (if using). Drizzle with half the dressing and mix gently

  3. Sprinkle with pistachio nuts and vegan feta. drizzle with the remaining dressing and add the rest of the mint and a bit more lime zest (optional)

  4. Taste and adjust seasoning as needed.

  5. Enjoy!
